DELAT is an enzyme produced by Laboratorio Prodor to make 100% lactose-free cheese. DELAT increases milk products digestibility and guarantees the production of 100% lactose-free cheeses.
Delat is a highly-purified and standardized liquid lactase enzyme. DELAT is produced by submerged fermentation on a vegetable substrate using a selected strain of Bacillus licheniformis kept under contained conditions and not present in the final product. The product hydrolyses lactose to a mixture of glucose and galactose. The product is a premium lactase particularly suitable for fermented milks and cheese manufacture and to avoid off-flavor typically associated with lactose free UHT/ESL milk products. DELAT made by Laboratorio Prodor is amongst the purest lactase products available on the market.

DIRECTIONS OF USE:
To produce lactose-free products we recommend to use 0,8 grams per liters of milk. We recommend to add DELAT directly in cold milk 12 hours prior to usage.
This product doesn’t require cold chain transportation. Store in original packaging in a cool, dry and dark place. If properly stored in original packaging the enzymes don’t loose their power.
